All-In 24 Day Challenge: Day 13 Max Phase

Spaghetti Squash Pizza
1 spaghetti squash
2 eggs
1/2 teaspoon dried oregano
1/4 teaspoon basil & garlic mix
1/2 teaspoon salt
Pizza/ Tomato Sauce
Fresh Mozzarella Cheese

Cut squash in half – use a big knife, cutting is kind of difficult. Place in microwave safe bowl with two inches of water.  Place in microwave for 15 minutes, uncovered. Cool slightly and remove seeds. Using a fork, pull the spaghetti strands away from the skin. Place on a plate or baking dish with paper towels. We want to try and soak up any excess moisture from the squash. In a bowl, mix together squash, egg and spices. Set aside. Preheat oven, with baking sheet and parchment paper inside at 400 degrees. Once hot enough remove pan cover with parchment paper, and spread spaghetti squash mixture over the baking sheet in a thin layer.  Bake until the edges begin to brown, around 20-25 minutes. Cover in a little sauce, cheese, and your favorite toppings. Broil for another 4-6 minutes on low, until the cheese is melted.
