All-In 24 Day Challenge: Day 24 Max Phase (LAST DAY)

Day 24:
  • Immediately upon rising (On an empty stomach): Fruit Punch Spark, MNS Color Pack (30 minutes before breakfast)
  • Breakfast (Meal 1): Chocolate Meal Replacement Shake
  • Mid Morning Snack (Meal 2): Homemade trail mix
  • 30 minutes before lunch: MNS Color Pack
  • Lunch (Meal 3): Salad topped with blackened fish and homemade Italian dressing , MNS White packs (both)
  • Mid Afternoon Snack (Meal 4): Apple with Natural Peanut Butter
  • Dinner (Meal 5): Chicken Stir Fry, see recipe below
  • Exercise: 3 mile run 
  • Evening Snack (Meal 6): Grapefruit

Total Daily Water intake -  80 oz

Thoughts- Last day of the challenge! I have to admit this has been by far the best challenge.  I know that it has helped that we have continued to eat health after our other challenges but I feel that we have made some awesome meals! We have heard great results from other of our challengers and feel blessed to be able to be apart of such a great company!  Looking forward to weigh in and measurements tomorrow!

30 Minutes Before Breakfast: Circuit Spark


Lunch: Whole Wheat noodles topped with homemade spaghetti sauce and Cannellini beans


Recipe


Chicken Vegetable Stir-Fry with brown rice
- 1 pound boneless chicken breast cut into 1 inch pieces
- 1 large bag of frozen stir fry veggies
- 1 tsp garlic
- 2 eggs
- 2 cups brown rice
- 3 tablespoons organic liquid aminos (soy sauce substitute)

Start cooking the brown rice according to the directions on the box, boil water for frozen stir fry veggies (follow directions on the bag), saute chicken. Take eggs and fry in pan with chicken. Once, brown rice is finished cooking add to pan with chicken, add in cooked stir fry veggies. Pour organic liquid aminos over the mixture and simmer for 5 minutes.

Recipes:



Banana Blueberry Baked Oatmeal

2 cups rolled oats
1 tsp baking powder
1/2 tablespoon cinnamon
1/4 cup honey
2 cups Almond milk
2 eggs
1/2 cup unsweetened apple sauce
2 tsp vanilla extract
2 bananas, sliced into 1/2 inch pieces
2 cups blueberries, fresh or frozen, divided

Preheat oven to 375 degrees. In a medium bowl, mix together oats, baking powder and cinnamon. In second mixing bowl, combine honey, almond milk, eggs, apple sauce and vanilla. Spray Olive Oil cooking spray on 8 x 8 baking dish. Arrange bananas and half of blueberries on the bottom. Cover with dry oat mixture. Pour liquid mixture on top of dry mixture, making sure its completely covered. Sprinkle remaining blueberries on top. Bake for 35 minutes or until set. Let cool before cutting. Serve hot or cold, topped with a little more almond milk! 



Blackened Fish Tacos

1.5 lbs tilapia fillets
1 1/2 tsp paprika
1 tsp garlic powder
1 tsp dried oregano
1 tsp onion powder
1/2 tsp cucmin
1/2 tsp salt
1/4 tsp cayenne pepper
2 tablespoon olive oil/ coconut oil
Multigrain wrap
Avocado- Cilantro Sauce
1/2 cup plain greek yogurt
1 ripe avocado, pitted and skinned
1/4 cup cilanto
1 jalapeno, chopped and seeded
Juice of 1 lime

1. In small bowl combine paprika, garlic powder, dried oregano, onion powder, cumin, salt and cayenne pepper. Sprinkle the mixture over both sides of tilapia fillets and then rub the seasonings in
2. Combine all of the Avocado- Cilantro sauce in food processor and mix till mixed well.
3. Heat oil in pan over medium-high heat. Add tilapia and cook for 4-5 minutes on each side or until outside is blackened and the fish flakes apart.
4. Remove fish from heat, put fish in wrap with Avocado- Cilantro Sauce with lettuce and tomato

Recipe:
Easy Sausage and Vegetable Foil Packs
  • Yellow/Green/Red Pepper
  • Onion
  • Potato
  • Organic Chicken Sausage
  • Olive Oil
Preheat oven to 350. Seal peppers, potatoes, onion and sausage in aluminum foil pouch spray with olive oil (to keep from sticking), top with fresh pepper or herbs and grill till potatoes are soft. Place in oven for 1 hour.

Spaghetti Squash Pizza
1 spaghetti squash
2 eggs
1/2 teaspoon dried oregano
1/4 teaspoon basil & garlic mix
1/2 teaspoon salt
Pizza/ Tomato Sauce
Fresh Mozzarella Cheese

Cut squash in half – use a big knife, cutting is kind of difficult. Place in microwave safe bowl with two inches of water.  Place in microwave for 15 minutes, uncovered. Cool slightly and remove seeds. Using a fork, pull the spaghetti strands away from the skin. Place on a plate or baking dish with paper towels. We want to try and soak up any excess moisture from the squash. In a bowl, mix together squash, egg and spices. Set aside. Preheat oven, with baking sheet and parchment paper inside at 400 degrees. Once hot enough remove pan cover with parchment paper, and spread spaghetti squash mixture over the baking sheet in a thin layer.  Bake until the edges begin to brown, around 20-25 minutes. Cover in a little sauce, cheese, and your favorite toppings. Broil for another 4-6 minutes on low, until the cheese is melted.
