Recipes

Turkey Bacon Egg Cups
12 slices bacon
8 eggs
1/2 cup frozen spinach
½ cup frozen green peppers and onions
pinch of salt
1/4 tsp black pepper
Preheat oven to 350 degrees. Whip the eggs with a fork. Spray non-stick spray in 12 muffin tins. Wrap each piece of bacon inside the sides of each muffin cup. Fill each bacon lined muffin cup 3/4 of the way with the egg mixture. Top with some spinach and green peppers and onion mix. Bake for 30-35 minutes, until the egg cups are golden brown.

Stove-top Popcorn
3 tablespoons coconut oil
½ cup popcorn kernels
Add oil to a heavy-bottomed pot over medium high heat. Add a couple kernels, when they start popping add remaining kernels and cover.  Gently shake pot over heat source to prevent the kernels from burning. Continue shaking until most kernels have popped.

  1. I am guessing you can store the Turkey Bacon and Egg muffins. How many do you suggest for 1 breakfast and how long can you store them?

  2. I have stored them for up to a week in the fridge and you could freeze them once they are cooked. I usually eat 2 for a serving with a side of salsa if you enjoy that!
